Fall Recipe to Tote in Your Thermo LUXE

We are finally feeling the fall weather here in San Diego and it's got us all dreaming up our favorite cozy recipes. First up is from our Customer Success Manager, Jordyn! This is her mom's famous recipe and one that is instantly requested the second she hears a leaf crunch.

Mama Jenny’s Chicken Tortilla Soup

Ingredients:

  • 1 LB frozen chicken
  • 1 (15 ounce) can whole peeled tomatoes, mashed
  • 1 (10 ounce) can red enchilada sauce
  • 1 medium yellow onion, chopped
  • 1 (4 ounce) can chopped green chile peppers (spice level to preference)
  • 2 cloves garlic, minced
  • 3 (14.5 ounce) cans low sodium chicken broth
  • 1 packet taco seasoning
  • 1 (10 ounce) package frozen white corn
  • 2 cans black beans, drained and rinsed

Directions:

  1. Place frozen chicken, mashed tomatoes, enchilada sauce, chopped onion, green chiles, and minced garlic into a slow cooker
  2. Pour in chicken broth and sprinkle in all of taco seasoning
  3. Stir in white corn and drained and rinsed black beans
  4. Cover and cook on Low setting for 6-8 hours or on High setting for 3-4 hours
  5. Remove chicken and shred when ready to serve
  6. Place chicken back in slow cooker and stir ingredients together. Add salt and pepper to taste
  7. Garnish with shredded cheese, sour cream, avocado and tortilla chips
  8. DEVOUR
